The number of items you can have checked out at a time depends on your status at NYU, as well as your campus location: 

-NYU New York: Most users can check out up to 200 books at a time. Non-degree students can check out up to 25 books.

-NYU Abu Dhabi: There is no limit to the number of books that can be checked out each semester at the NYUAD Library. However, please abide by the due dates of all materials checked out.

-NYU Shanghai: As many as you need!

Please note, it's important to keep in mind that books can be recalled by other patrons, and are subject to fines past the new due date.
